What a scratch biscuit program really costs, and what bake-off gives back.
A worked example, not a customer story. The numbers below are typical assumptions for a breakfast-and-lunch kitchen. Change any of them to your own and the results update.
A WORKED EXAMPLE
A kitchen serving 150 biscuits a day
Scratch means a dedicated early shift: mixing, laminating, cutting, and a full batch baked before service whether or not it sells. Bake-off means the same hourly line cook loads a sheet pan from the freezer in batches sized to the rush. Product cost is the same conversation either way, so this compares the two things that change: labor and waste.

Bake-off labor is counted at 20 minutes per 60-biscuit case for loading, rotating and plating, at the same hourly rate. Where the hours go
A scratch program needs someone who can laminate, and needs them early. Bake-off needs an oven at 360°F and any cook on the line. Twenty-two to twenty-four minutes later, the biscuit is on the plate.
Where the waste goes
Scratch is baked in one batch before service. Bake-off is baked in sheet pans sized to the rush, so a slow Tuesday costs you a sleeve, not a batch.
Where the dayparts come from
The same case covers a breakfast sandwich at 7, a slider at noon and a shortcake at 9, so the freed hours can go to menu items that carry a higher check.
